Pav Bhaji is common Indian street food wherever dinner rolls/buns are served with spicy mashed veggies flat-top with small indefinite quantity of butter. Street food doesn’t make a come back than this
Ingredients
- 1 giant carrot, cubed
- 2 potatoes, cubed
- 1 capsicum, chopped
- 1 cup cauliflower florets, chop
- 8-10 french beans, string and chop
- 1/4 cup inexperienced peas
- 2 onions, finely sliced
- 2 inexperienced chillis, slit length wise
- 1 tsp ginger-garlic paste
- 1/4 tsp turmeric pwd
- 1/2 tsp red hot pepper pwd
- 1 one/2 tbsps Pav Bhaji Masala
- 3/4 tsp sugar (adjust)
- salt to style
- 2 tomatoes, finely sliced
- 1 tbsp juice
- 1 tbsp low fat butter (vegans will avoid butter)
Methods for Pav bhaji
- Pressure cook potatoes, cauliflower, peas, beans and carrot at the side of one cup of water, till soft. Drain any left over water and keep aside. Mash all the hard-boiled vegetables employing a masher
- Heat oil in a very vessel, add the inexperienced chillis and onions and saute for four mts. Add the ginger-garlic paste and saute for an additional three mts. Add pepper and saute for two mts.
- Add the hot pepper pwd, turmeric pwd, pav bhaji masala, sugar and salt. mix well. Add the tomatoes and cook till soft, approx 5-6 mts.

- The gravy can begin to thicken. regulate the salt, if needed. shut down heat and add butter and juice and mix. Garnish with recent coriander leaves.
- Serve hot with gently cooked pav/pau and sliced onions.
